Summer. It’s so soon, you guys!!
We broke into the 80-degree weather this week. It was one of the most perfect Pittsburgh days I have ever experienced; warm, but not humid. Is that even possible in Pittsburgh?! It. Was. Perfect.
Because of this “heat wave,” I am craving all-things chilled, frosty, and frozen.
Ice cream has always been one of my favorite treats. I distinctly remember trips to a local ice cream shop after events at school or a job well-done on a report card with my family. I was am a chocolate-peanut butter gal; the more rich peanut butter I could get, the better. My brother, on the other hand, was a fruit boy. His favorite? Raspberry ice cream with Butterfinger candies mixed in. He claimed it was delicious. I claimed it was funk-ay.
After transitioning my diet to a whole foods, plant-based one, I began to realize that fruit-flavored frozen treats were delicious. And that I could make them myself. With no processed ingredients. In less than a minute.
Don’t you love it when that happens?
This Strawberry Banana Sorbet is the creamiest, most lucious, sorbet I have ever had in my entire life. Best of all, it tastes like real fruit because it IS! Perfectly sweet bananas are whirled with plump and juicy strawberries to create the Strawberry Banana Sorbet of a lifetime. And it couldn’t be more simple.
You can be eating this blissful Strawberry Banana Sorbet with the use of just two ingredients. Did you catch that? Two. Ingredients. And you probably have them sitting in your kitchen as you read this. Peel that brown-speckled banana, chop it up into five or six pieces, and stick it in a freezer bag. While you’re at it, lob the top off of two large strawberries, and throw them in the freezer, too.
Now, wait. Wait the longest few hours of your life.
Once your fruit is nice and frozen, blend, baby, blend. You’ll be left with a sorbet in definition (just fruit, no dairy), but a frozen treat more reminiscent of ice cream or, dare I say, gelato. Because this sorbet is made of only fruits, you’re getting the best bang out of your buck: potassium, vitamin C, fiber, vitamin B, and so much more! “Nutritious” has never tasted so perfect.
This Strawberry Banana Sorbet is the perfect treat with which to ease your way into that summertime bliss. My recommendation? Buy bananas and strawberries in bulk. After just one taste, you’ll realize that this nutritious Strawberry Banana Sorbet is just what you need to get yourself into summer mode.
