I once went an entire week eating nothing but Mexican food for dinner.
Oh yes. It was a glorious seven days.
You see, I love Mexican food. I love the spice, the freshness, the popularity, and the simplicity. I truly believe that salsa, tacos, and guacamole should be considered food groups in and of themselves. I’m never not hungry for Mexican cuisine.
Scratch that. I’m never not hungry for this guacamole. My roommate and I go completey bonkers over this Pineapple Guacamole, and I have no quips over admitting that we have it at least once a week. Saturday was our fiesta night, and, of course, this Pineapple Guacamole was front-and-center at dinner time.
We really love this Pineapple Guacamole on top of Better-than-Chipotle Burrito Bowls. And these Guacamole Tacos, which my roommate lovingly dubbed “Guacos.” And as a simple appetizer with some tortilla chips. And on top of a spoon.

So, the beauty of this recipe lies in the fact that it requires a mere SIX ingredients. Because of the freshness of these ingredients, we don’t need many additions, frills, or fluffs to make this Pineapple Guacamole taste like pure heaven. First, we’ll need some bright green avocado. Filled with healthy fats, avocados are full of health benefits that our bodies crave! Not to mention that they’re freakin’ delicious. I always find that avocados and salt are BFFs; you can’t have one without the other. Don’t skimp on the salt step, as it truly makes a huge difference in the final product!
Next, pineapple. My roommate is a pineapple freak, so I like to use it in as many ways as possible. I’m addicted to the sweet-tart pop the pineapple brings to this guacamole party fiesta, and I know you will be, too! If it may seem like an odd addition to you at first, give it a try. I promise you’ll be drinking the Pineapple Guacamole kool-aid real soon (erm…please don’t make Pineapple Guacamole kool-aid).
Next, some flavor enhancers! Cilantro, garlic, lime, and an optional jalapeño take this Pineapple Guacamole from good to out-of-this-world-bonkers-amazing. Cilantro brings some freshness, while garlic offers a nice bite. Lime adds that citrusy note that cuts through the fattiness of the avocado. And jalapeño? If you’re looking for some heat, definitely don’t leave it out!
Seriously. If you bring this Pineapple Guacamole to your next summertime picnic, you will be the hit of the party. Like, I’m talking super popular. You’ll be invited to all the parties. You’ll be asked for the recipe all the time. Your street cred will go through the roof…you really do need this Pineapple Guacamole in your life.
And seriously. Try it with these burrito bowls or tacos. Like, tonight. Mexican Meatless Monday? Um. Best idea ever.
Pineapple Guacamole

This Pineapple Guacamole is about to become your new summer obsession. It's tart, sweet, and creamy and takes mere minutes to throw together!
You'll Need...
- 2 medium avocados, pitted
- 1/3 cup diced pineapple*
- 2-3 Tbsp. minced cilantro leaves
- 1 garlic clove
- Jalapeño, sliced, seeded, and diced (optional)
- 1 lime
- salt, to taste
Directions
- Remove the green flesh from the avocados and place in a bowl. Mash the avocado slightly, then add pineapple and cilantro. Mix to combine.
- Grate the garlic clove with a handheld grater**, and add it to the bowl. Add jalapeño if using. Mix to combine.
- Slice the lime in half and juice one halves into the bowl. Mix to combine. Taste, and add additional lime juice if needed.
- Add salt to taste. Mix to combine.
- Serve Pineapple Guacamole with chips or vegetables, or serve them on top of burrito bowls or tacos!
Additional Notes
*I used thawed frozen pineapple tidbits. Use fresh if you'd like!
**You may mince the garlic clove if you do not have a grater.
