I love Pittsburgh. I love food. I love that Pittsburgh has become a foodie town.
I love that, no matter what I’m hungry for, I can find a quality restaurant in the heart of the ‘Burgh dishing out kick-butt cuisine. In need of some salty chips and salsa with a margarita chaser? Verde is where it’s at. How about something a little funky and tropical? Try Kaya, one of my favorite restaurants of all-time.
But when I’m in the mood for something truly exceptional, something that I can split with a loved one on a special occasion, Altius has become my new go-to.
I recently went to Altius with my family to celebrate my graduation. Altius is fixed on top of Mt. Washington, giving patrons one of the most breath-taking views of the steel city. And while the sights of the city are undoubtedly spectacular, it’s the food that makes Altius truly special.
I ended up ordering the risotto, which was so creamy it could have made an Italian grandmother weep on the spot. To say it was one of my all-time favorite dinners would be a complete understatement. As I’m typing this, I can still taste each salty-rich bite. Dang. Now I’m hungry.
But what really stood out to me during my visit to Altius was a simple amuse bouche that took my tastebuds for a serious ride. This, my friends, was the fabulous Cucumber Ginger Juice. Ridiculously refreshing, slightly spicy, and down-right addictive, this shooter was the perfect palate-cleansing way to kick off an epic meal. I knew that I had to re-create this Cucumber Ginger Juice on the blog, and after a few trial runs, I know I hit the nail on the head with this 4-ingredient recipe!
Although the act of juicing your own ingredients may seem like a daunting task, it truly could not be easier. Especially if you follow the directions on my handy-dandy “How to Make Your Own Juice Without a Juicer” tutorial! And especially if you can get your hands on four of the easiest ingredients to obtain: cucumber, ginger, honey, and water. AND ESPECIALLY if you’re a fan of delicious flavor. Believe me, you won’t want nothin’ standing in your way between you and this tasty juice!
Mark and I are simply obsessed with this Cucumber Ginger Juice – it’s exactly what you’ll want in your cup when you need a small zap of whole food energy this summer. I can’t get over how perfectly balanced this drink truly is; the cooling cucumber, the sweet honey, a peppery finish…simply put, this Cucumber Ginger Juice is the juice of your dreams.
Cucumber Ginger Juice

This 4-ingredient Cucumber Ginger Juice is a summertime drink that's full of refreshing flavors and a slight spicy kick!
You'll Need...
- 1 English cucumber, chopped into medium pieces
- 4 tsp. freshly grated ginger
- 1 and 1/2 Tbsp. honey
- 1 cup cold filtered water
Directions
- Add all ingredients to a small blender and blend until smooth.
- Pour mixture into a fine-mesh sieve fitted over a small bowl. Press the juice pulp against the sieve to extract as much liquid as possible. Discard pulp. Strain mixture again, if desired.
- Pour into one large or two small glasses. Chill if desired.

Mmmm I adore green juices and cucumber just has this way of sneaking so much freshness into a drink! I don’t have a juicer but I’m totally going to try your method of juicing with my trusty blender :)
PS You’re making me miss the burgh so much! I graduated in 2012 and I feel like all these amazing foodie hotspots have popped up since I left. Pittsburgh is just becoming cooler and cooler!

If I had to drink one thing for the rest of my life, this would be it! It’s easy to make, has an impeccable artisan taste, and it’s incredibly refreshing. Definitely my new go-to.
