So, back when I was a meat-eater, Thanksgiving foods never really excited me.
Stuffing is soggy bread. Turkey is dry and tasteless. Ham is way too salty. Mashed potatoes are delicious, but super duper filling. Cranberry sauce…no food should jiggle that much.
I’ve always felt pretty “meh” about the whole Thanksgiving feast idea.
Until I turned vegetarian.
Who knew that there was such a wonderful, glorious world of veggie-laden dishes perfect for a fall feast such as Thanksgiving?! My mind was pretty much blown after I realized that I could fill my plate with glorious greens, earthy grains, and ultra-succulent vegetables and have a perfectly satisfying holiday meal.
Call me a full-blown Thanksgiving convert!
