So this weekend was a very special weekend for us because it was my boy’s birthday weekend! ???
I always make a huge deal out of birthdays because I love celebrating the people I love so very much. And getting to celebrate Mark is pretty much my favorite thing ever.
I mean, getting to celebrate the entire weekend with my:
- fellow taco lover
- appetizer buddy
- popcorn partner in crime
- smoothie connoisseur
- co-kitten parent
- roommate
- boyfriend
- best friend
I really am the luckiest girl ever. ?
But if there’s one thing that I’ve learned about Mark over the 2+ years I’ve known him, it’s that he’s absolutely head-over-heels in love with spinach artichoke dip. He has his famous crock-pot recipe that he breaks out for parties or special occasions that’s absolutely delicious, but I wanted to try and lighten up the recipe for him, all while keeping that creamy, dreamy texture and addictive flavor that he loves oh-so much. Because lightened-up = we can have it much more often. ?
And by golly, I think we’ve done it with this Healthy Spinach Artichoke Dip! With only 6 ingredients and 30 minutes, and the Healthy Spinach Artichoke Dip of your dreams [and let’s be serious, Mark’s dreams] awaits!
Just like my Healthy Buffalo Chickpea Dip recipe (OMG YES), our base for this dip starts out with some hummus. Hummus is seriously one of my all-time favorite healthy food hacks because it’s the perfect base upon which we can mix and match flavors to create something really special. And because I literally always have it in my fridge, I can whip up any dip I wish whenever the craving strikes! Which is wayyyy more often than I care to admit. ?
Next – spinach and artichokes! I used frozen spinach because that’s what I had on hand, but I’m really interested in trying this recipe with some fresh kale in the near future. If I do, I’ll be sure to update the recipe with any adaptations. As for the artichokes, Mark gave me this awesome idea of pulsing them in the food processor to break them up, making them the absolute PERFECT texture for this dip! Serious yum.
You really can’t have spinach artichoke dip without the cheese, but just like in my BuffChixpeaDip recipe, we’re only using 1/4 cup! ooh ooh, and vegans could totally get away by getting some cheezy flavor via some nutritional yeast if they’re so inclined. We’ll also add some Italian Seasoning and garlic because…well…they tastes really dang good.
I know you’re probably disappointed that I posted two dip recipes in a row. But seriously, did you really want me keeping all of this deliciousness all to myself?! There’s no way I could do that to you ?
Whether you make it for the Super Bowl, for snack time, for a party, or for your appetizer-lovin’ boyfriend, I know you’ll go bonkers over this Healthy Spinach Artichoke Dip!
PrintHealthy Spinach Artichoke Dip
Ingredients
- 10-oz. plain hummus
- 8-oz. frozen spinach, thawed and squeezed to remove extra moisture
- 1/4 tsp. Italian Seasoning
- 2–3 cloves garlic, minced or grated
- 1/4 cup cheese (vegans use nutritional yeast or vegan cheese)*
- 1/2+ can artichokes
- salt + pepper
Instructions
- Preheat your oven to 350 degrees F.
- Mix hummus, spinach, Italian Seasoning, garlic, and cheese in a bowl until well-combined.
- Add artichokes to a food processor, and pulse until broken up slightly, then add them to your hummus/spinach mixture.
- Season with salt + pepper, and mix well to combine.
- Pour dip into a baking dish of your choosing (I have small crocks that I love), and bake 20-30 minutes, or until the dip is nice and hot.**
- Remove from oven and serve with corn tortilla chips, carrots, or your favorite dipping utensil!
Notes
*I used mozzarella and parmesan, but you can definitely use your favorite!
**Baking time will depend entirely on your baking dish! Just keep an eye on it and use your judgement!

Great question! 1/2 can of artichokes = 1/2 of a 14 oz. can of artichoke hearts. So roughly 7 oz. :)

Hi! I used regular ol’ shredded mozzarella, but you can use any melty dairy free cheese!
