When I was younger and I stayed home from school with the stomach bug, there was only one food that I craved.
One dish that was always comforting, never boring, and exactly what my tender tummy desired:
peanut butter toast.
I don’t know what it was about that rich and creamy peanut butter paired with that nice crunch of the toast that made me think of only it when I was under the weather. Once I moved away to college, and then eventually out into the real world, I stopped keeping bread in the house; Thus I said sad goodbye to my delicious carby friend.
But then, like…last year, toast became cool. Hipster, almost. Like, there are restaurants completely devoted to…toast. Instagram blows up with photos of THE most perfectly crafted toast I have ever seen in my life every single morning. It boggles my mind that something as simple as toast has become somewhat of a foodie phenomenon.
But then I took a bite of this Hummus Kale Toast. And friends, I now totally understand the toast craze.
I mean, don’t get me wrong, I will always consider peanut butter + toast my first great toast love. But as my palate has progressed through the years, I’ve fallen in love with even more unique flavors that I knew would make out-of-this-world toppings for a lowly piece of toast.
You all know I’m addicted to hummus, so that’s where we’re starting this Hummus Kale Toast journey. Homemade, store-bought, roasted red pepper-flavored, lemon-flavored…choose yo’ fav. I guarantee you it’s going to be delish.
I’ve kind of totally been addicted to sautéing kale with garlic lately (proof here), so I thought that it would be super yummy atop this toasty masterpiece. And it so-totally IS. There’s nothing like starting your day off with a big pile of delicious leafy greens! (proof here)
And I’m convinced that a dish is only as good as its toppings! That’s why we’re going all out with lemon zest, red pepper flakes, and hemp seeds! Yeah, this is the toast of a million flavors and textures. BUT I promise you that it works. Ohhhh, does it work.
Guys, I’m normally all about that sweet breakfast life, but this Hummus Kale Toast…it’s a game-changer. Not to mention that you’re getting some carbs, protein, healthy fats, andddd leafy greens, all in one spectacular toasty experience. And for those of you who are still skeptical about this whole toast thing…I promise you it’s not a fluke. Taste and believe, friends.
PrintHummus Kale Toast
- Yield: 2 slices (double as necessary)
Ingredients
- 2 slices gluten free bread
- 1/2 Tbsp. olive oil
- 1 handful kale
- 1/2 clove garlic, minced or grated
- salt + pepper
- 2–3 Tbsp. hummus
- 1/2 lemon, zested
- For topping: hemp seeds and red pepper flakes
Instructions
- Toast your bread in the toaster, on the stove, or in the oven.
- Meanwhile, add olive oil to a sauté pan over medium heat. Once hot, add kale, garlic, and salt+pepper to taste. Sauté until the kale is tender and the garlic is fragrant, 3-5 minutes.
- Spread the toast with your desired amount of hummus.Top with garlicky kale. Top with lemon zest, hemp seeds, and red pepper flakes. Devour.
