I’ve found myself with a little downtime (hallelujah), so I’ve been putting quite a bit of blood, sweat, and tears into the blog.
So I did some thinking about what I could focus on during this time off, and I really think you’re going to like the outcome of this feverish pondering…
I’m going to write another eCookbook for you!
You know I totally fangirl over making cookbooks for you guys. I’ve wanted to see my name on a byline since I was a kid; being able to make these eCookbooks for you is such a great love of mine. Your positive response to both my Skinny Santa book and my Best of Fooduzzi book has been all of the validation I need to write another one!
But to change it up a bit, I’m thinking that this eCookbook will be focused on…
*drumroll please*
Healthy Gluten Free Copycat Recipes!
You guys know that I looooove my copycat recipes, and it seems like you guys go crazy for them, too (see here, here, and here for proof)! And that’s why I want to create a brand spankin’ new eCookbook filled to the brim with ’em!
BUT to make sure that I’m headed in the right direction, I’d seriously love your input on this super simple 4 question-4 minute survey! Basically, I want to know what meals and/or sweet treats you want me to try to healthify and make gluten free! I have a list of a few recipes I want to try, but I feel like I’m just scraping the surface of the healthy gluten free possibilities!

Did you hear me? Pizza. That. Tastes. Like. Garlic. Bread. !!!!
Annnnnd a very happy Thursday to ya.
Mark and I happily munched on this garlic bread pizza Monday night for dinner… Seriously, is there a better way to start the week than with pizza? I think not! We then happily jumped on the couch to watch an episode (OK, two) of Game of Thrones with two carb-happy stomachs. Life is good, friends. Life is good.
To make it gluten free, I used some of my favorite pizza mix from Bob’s Red Mill! It bakes up beautifully with a nice chew to the crust…obsessed doesn’t even begin to describe just how strongly I feel for this stuff. And because I’m a roasted vegetable freak, I topped the pizza with my all-time favs: sweet potato, broccoli, and brussels! We’re dipping into that time of year where I crave veggies morning, noon, and night – my grumbling stomach is unstoppable in the summer. In fact, Mark and I have this salad that’s topped with all the roasted veg – perhaps you’ll be seeing it on the blog soon. (hint: reallll soon) ?
And that cheese on top? Mark loves this pizza place back where he’s from that puts the cheese on last. Like, as soon as your pizza pops out of the oven, slide that thin slice of mozzarella on top. It’ll melt, but not too too much…juuuuust enough to give you that perfectly melty bite. #instaworthy
PrintGarlic Bread Pizza with Roasted Vegetables
- Yield: 1 12-inch pizza
Ingredients
- 1 small sweet potato, diced
- 2 cups broccoli florets
- 8–10 large brussels sprouts, halved
- 5 Tbsp. extra-virgin olive oil, divided
- 1 package Bob’s Red Mill Gluten Free Pizza Mix, prepared as directed, and divided in half (alternatively, you can use your favorite pizza crust!)*
- 1 tsp.+ finely minced garlic
- 1/4 tsp. dried oregano
- salt + pepper
- grated parmesan, optional (omit for vegans)
- 6+ thin slices fresh mozzarella (omit for vegan version)
Instructions
- Preheat the oven to 425 degrees F. Place diced sweet potato, broccoli, and brussels sprout halves on a baking sheet. Drizzle with 1 Tbsp. olive oil and season with salt + pepper. Roast for 15-20 minutes, or until vegetables are tender and golden.
- Once the vegetables are tender, grab another baking sheet, and rub with 1 Tbsp. oil. Spread 1/2 pizza dough over the baking sheet (I found that it helps if you slightly wet your hands) and bake for 7 minutes.
- Meanwhile. combine remaining 3 Tbsp. oil and garlic in a small bowl. Mix to combine.
- After 7 minutes, dump 2/3 of the oil-garlic mixture on top of the crust and spread evenly with the back of a spoon. Sprinkle with oregano, salt, and pepper. Top with a layer of grated parmesan (optional) and roasted vegetables, then spoon over remaining oil-garlic mixture.
- Bake for another 15 minutes, then remove and add mozzarella. Bake for an additional 3 minutes, or until the cheese is just melted and the crust is golden brown.
Notes
*What to do with the other half of the pizza dough? Double the recipe, or make a different one! We made a margarita pizza (tomato sauce, mozzarella, and basil) the other night with this crust, and it was absolutely divine. I also really love this recipe!
