A bonus recipe for you for Thanksgiving!
I couldn’t keep this recipe under wraps when a holiday PERFECT for serving these brown sugar herb pecans was in our midst!
For the past few years, my dad has made some sort of herbed spice nut for the holidays.
Honestly, they’re one of my favorite parts of this time of year. They’re always sitting out, so they’re perfect for fulfilling my snacky cravings whenever they strike (which, um, is all the time).
But also, nuts are such a holiday thing, you know? I remember my great-grandma would buy the nuts in the shell. And I just thought it was THE coolest thing ever. We’d crack them together using doll nutcrackers (because, you know, tis the season) or just your standard metal ones, but it’s one of my best memories of the holidays.
So we’re getting a little nutty today! And in the best way possible: with brown sugar and fresh herbs.
Hubba hubba YES. If these don’t scream “the holidays” at you, I don’t know what does.
So, these are really crazy simple. Like, it’s almost embarrassing that I’m sharing them as a recipe with you today.
But, alas, I am. Because they’re so freakin’ good. Mark and I ate over half of the batch in less than 12 hours. Whoooooops.
You simply mix olive oil, some hardy herbs (I love rosemary and thyme here, but you do you! Sage would be fab as well), salt, pepper, and brown sugar together with some of your favorite nuts. Bake for 10 minutes. Devour.
So simple, right?! I reallllly love pecans here because they have all of those wonderful grooves in which herb chunks and sugar granules get stuck in and it’s just perfect.
I definitely root around in the nut bowl for the nuts that are most heavily coated in sugary-herby goodness. I am that person. Pecans make that rooting around process so much easier. But if you like almonds/walnuts/cashews/pistachios better, you do you! Or do a mix! It’ll all work fabulously.

Quick and Easy Brown Sugar Herb Pecans

Such a simple and delicious recipe! Perfectly herby and just a little bit sweet for an addictive holiday snack!
You'll Need...
- 3 cup raw pecans (or nut-o-choice)
- 3 Tbsp. olive oil
- 2 Tbsp. minced hardy herbs (I used mostly rosemary and a bit of thyme)
- 1 and 1/2 Tbsp. brown sugar
- salt + pepper
Directions
- Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
- Mix all of your ingredients in a medium bowl. Toss to coat, ensuring that each pecan is coated in the mixture.
- Pour onto your baking sheet and bake for 10 minutes, taking care not to burn. Immediately remove from the oven and allow the nuts to cool in the pan. Pour into a bowl or jar and enjoy!
