As I type this, my cat is sitting behind me on the couch, desperately breathing into my ear, waiting for her dinner to be served.
I mean, she gets it honestly. Having me as her mama and whatnot.
When she was younger, Mark and I thought it would be adorable to teach her how to “say” please when we were about to feed her.
If you follow me on Instagram at all, I’m sure you’ve seen it. At least once. At least.
And honestly? It is adorable. We hold the food above her head, she sits, we say, “Can you say please?” and she meows super loud and cute and it makes us melt into a puddle of cuteness, and then she gets to eat.
But this darling little ritual has backfired in the most “you should have known better” way possible.
She is now the queen of making as much noise as possible in the mornings. I’m talking meowing, scratching the window, poking her head through blinds, running her claws against our air vent, pawing at our oven.
Literally anything and everything to get her mama out of bed and food in her bowl.
It’s the worst, but also the best because I love my little floof and I love that she more or less wants to see me so bad that she’s willing to wake up the entire neighborhood to make it happen.
Even if, at the core, her main motivation is food fueled.
What does that have to do with Easy Vegan Chipotle Crema? Nada.
But my goodness is it delicious. Sweet and smoky and spicy. The three essential S’s. This stuff has them.
And, as the name not-so-subtly implies, it’s EASY. So easy, guys.
First, soak some cashews. Overnight is best.
Next, dump all of your ingredients (like chipotle peppers in adobo [affiliate link], lime juice, water, salt + pepper) in a blender and blend until super smooth.
That’s it! We can do that, right?!
The end result is so creamy, you guys. Perfect as a dressing, spread, or dip.
Yep, get yourself a recipe that can do all three.

Easy Vegan Chipotle Crema

A sweet, spicy, smoky sauce perfect as a dressing, spread, or dip! Naturally vegan and gluten free.
You'll Need...
- 2 cups cashews, soaked in water overnight
- 3 chipotle peppers in adobo [affiliate link]
- 1 Tbsp. adobo sauce
- juice of 1-2 limes*
- 1+ cup water
- salt + pepper
Directions
- Drain and rinse your cashews. Dump them into a high-powered blender along with your chipotle peppers, adobo sauce, and lime juice. Add 1/2 cup water, and blend, drizzling the rest of your water in the blender as it's blending. You want to add enough to get it nice and creamy and thick. You might need to stop and scrape down the sides as well.
- Season with salt + pepper, and blend to combine. Serve as a dressing, spread, or dip!
Additional Notes
*I only used one lime, but if you like your crema tangier, add two.

Do you buy your cashews locally? I used to buy them when I was vegan but they are really expensive and I could no longer afford them. I’m just asking where you buy them, in case you buy them for a good price online? This recipe sounds fabulous! I love chipotle anyway!
