Okay, don’t laugh.
I know this is slightly ridiculous. Just know it’s way less ridiculous than it originally was going to be.
In my mind, this salad had pizza croutons. Yes, a burger salad with pizza croutons.
While we’re not getting that weird today, we are getting a little weird. But that’s okay! Because we’re tossing burger toppings on a salad, adding a veggie burger, and topping it with the most delicious yellow mustard vinaigrette.
Would you believe we have these for dinner like…three times a week? They’re just so easy! And filling.
While I love me a homemade veggie burger (see here, here, or here), there are some really great ones that you can buy from the store.
And on a busy weeknight? That sounds right up my alley. I’ll pick up a box of a tasty veggie burgers, head home, and whip these up in about 20 minutes. Does it get any better than that? I think not.
While I have some suggested toppings below, they’re totally up to you. If you like it on a burger, you’ll like it on this salad.
I really really love butter lettuce (it’s so soft!), so I used it here. My burger toppings are pretty standard after that: tomatoes, pickles (a lot lot lot of pickles), and avocado! I highly suggest toppings like onion (caramelized or raw), sautéd mushrooms, and sun-dried tomatoes if you’re feelin’ fancy!
And because this isn’t really a sandwich, do we really need bread? 100% yes we do. Always. I got a seed-filled loaf of bread, cubed it up, toasted it in some olive oil, and used them as homemade croutons! So fun, right?
And then the dressing! If I could pick one dressing to drizzle all over my salads for the rest of forever, this might be the one. It’s sweet, tangy, mustardy, and rich, and I just love it paired with a salad like this.
You know, one that has a bunch of different flavors, textures, and fun going on. It’s so good! You’ll love it.

I’m not one to pass up a (veggie) burger, but man oh man. I might love this salad version even more! The crispy bread! The addictive dressing! It all just works.

Ingredients
DRESSING:
- 3 Tbsp. extra virgin olive oil
- 1 tsp. yellow mustard
- 1 Tbsp. apple cider vinegar
- 1/8 tsp. garlic powder
- 2 tsp. honey or agave (for vegan version)
- salt + pepper
SALADS:
- 1 Tbsp. olive oil
- 2 thick slices bread, cubed
- salt + pepper
- 2 servings butter lettuce
- 1 handful grape tomatoes, sliced
- 3 baby pickles, diced
- 1 avocado, sliced
- 2 veggie burgers, cooked according to package instructions
Instructions
Mix up the dressing ingredients and set it aside.
Add your olive oil to a skillet over medium heat. Add your cubed bread, and season with salt and pepper. Sauté until bread is crisp (it goes from crisp to burnt quickly!), and then immediately move the bread cubes to a plate).
Divide all of your salad ingredients between two plates. Top with dressing and enjoy!
