A filling, simple, quick dinner! These salads are topped with croutons, avocado, pickles, tomato, & a veggie burger!

Mix up the dressing ingredients and set it aside.
Add your olive oil to a skillet over medium heat. Add your cubed bread, and season with salt and pepper. Sauté until bread is crisp (it goes from crisp to burnt quickly!), and then immediately move the bread cubes to a plate).
Divide all of your salad ingredients between two plates. Top with dressing and enjoy!
