Vegan Burger Salads with Yellow Mustard Vinaigrette

A filling, simple, quick dinner! These salads are topped with croutons, avocado, pickles, tomato, & a veggie burger!

Ingredients

DRESSING:

  • 3 Tbsp. extra virgin olive oil
  • 1 tsp. yellow mustard
  • 1 Tbsp. apple cider vinegar
  • 1/8 tsp. garlic powder
  • 2 tsp. honey or agave (for vegan version)
  • salt + pepper

SALADS:

  • 1 Tbsp. olive oil
  • 2 thick slices bread, cubed
  • salt + pepper
  • 2 servings butter lettuce
  • 1 handful grape tomatoes, sliced
  • 3 baby pickles, diced
  • 1 avocado, sliced
  • 2 veggie burgers, cooked according to package instructions

Instructions

Mix up the dressing ingredients and set it aside.

Add your olive oil to a skillet over medium heat. Add your cubed bread, and season with salt and pepper. Sauté until bread is crisp (it goes from crisp to burnt quickly!), and then immediately move the bread cubes to a plate).

Divide all of your salad ingredients between two plates. Top with dressing and enjoy!
