I’m back with more hummusy fun, my friends!
We’ve been very very into wraps lately. They’re easy, endlessly customizable, and honestly part of a perfect filling dinner for busy weeknights.
We’ll take whatever beany protein we have (typically black beans or lentils), add some sort of spread (cheese for Mark, hummus for me), add some veg (literally whatever we have cooked in the fridge), and then drizzle the whole thing with hot sauce (typically Franks, but also whatever we have in the fridge).
Then roll it up nice-n-tight in a tortilla (whole wheat, for health). Simple as that!
And if you have a big ol’ cuppa chili to dip said roll-ups into. Well you’re just winning that weeknight dinner life, my friend.
I know this doesn’t look or sound all that exciting. And at surface-level, it probably isn’t.
But you know what takes it from a meh weeknight dinner to, a wow this is way better than I thought it would be dinner?
Toasting. The. Tortillas.
Add a wee bit of oil in a pan and toast it up crisp. It warms everything on the inside, and gives the outside a toasty flavor and crisp texture.
It’s less oily than frying, and a little more luxurious than baking. I love it.
That GBD-ness!
Like I mentioned, we like serving these with chili on the side for extra protein and dipping fun, but I also like to eat these for lunch with some sort of fruit on the side.
I’m just really into the simple things at the moment, you guys. And I’m kinda totally loving it.

Random? Yes. Yummy? You bet. A super easy plant-based meal for weeknights? Oh yes! We love these simple vegan roll-ups as part of a quick meal.

Ingredients
4 wraps (I like whole wheat)
~3/4 cup hummus (I like roasted garlic flavored)
~1 cup cooked lentils (I like using this recipe – make sure they’re well-drained)
~1 cup cooked, chopped broccoli florets (or your favorite veggies)
hot sauce
chili, for serving
Instructions
- Add a small dollop of hummus onto your wrap and spread it thin to coat one side. Add lentils, broccoli, and hot sauce to once side of your wrap (like you’re making a burrito), and wrap tightly into a taquito-like shape. Continue with the rest of your roll-ups.
- Heat a skillet over medium heat. Drizzle a few teaspoons of oil into the skillet, and when hot, add your roll-ups seam side-down. Toast for a few minutes, then carefully turn to brown on each side. This will heat your fillings through as well.
- Serve immediately with your favorite chili or dipping sauce. Yumtown, population you.
