If these colors don’t scream weekend fun, I don’t know what does.
Colorful, unicorn, rainbow foods. Super fun and so freakin’ pretty.
And while I’m the first to admit that I enjoy my food much more when it’s pretty, I’m confident that I can totally get my color fix in 100% natural, plant-based, and healthy ways.
Plus, we’re finally getting our first dose of real warm weather, so I’m all about the colorful fresh fruits and veggies at the moment.
Here are some of my favorite naturally colorful vegan recipe ideas for your spring and summer festivities!

Is there anything better than a roasted potato? I think not.
This recipe has you cook the potatoes twice: you boil them to get them tender and then you roast the heck out of them after you smash them! The scraggly edges get all nice and crispy, and I can almost guarantee this will be the most fun you’ll have with a carb.
Holy. Moly. You guys went bonkers over this recipe last Thanksgiving, and I did too. I think I made it three times? In a month? Yeah. I’d call that an obsession.
The crust is super simple to throw together, and the filling comes together in a blender. Bake, chill, devour with forks. There’s no time for plates when purple pie is involved!
If you can’t find purple sweet potatoes, orange works just as well. It’s just way more fun when you’re eating something purple.

Matcha is a type of green tea, and it’s nice and bitter and earthy. I know that doesn’t sound great on its own, but when paired with rich dark chocolate? Holla. Sign me the heck up.
The best part? You only need four ingredients to make this delicious, melt-in-your-mouth situation happen at home!

Definitely not the healthiest recipe on the list (it’s basically just sugar, milk, and our coloring), but it’s perfect for icing cookies!
Naturally colorful ingredients like matcha, turmeric, and red juice make perfect natural food coloring agents!
My fave? Definitely the matcha. I love how it’s speckled!
thai peanut cauliflower steaks
While the sauce isn’t the prettiest thing in the world, the roasted cauliflower steak sure is!
Cauliflower is a fabulous veggie for the color-obsessed because it comes in so many variations: white, green, yellow, and BRIGHT purple.
I’m not the biggest cauliflower fan, but I just can’t pass up purple produce when I see it.
vegan blood orange ginger juice
Homemade juice…without a juicer! And it’s BRIGHT red thanks to one of my favorite fruits: blood oranges.
You’ll love the combo of the sweet fruit juice and ginger together. The ginger gives the juice a nice bite that is just so refreshing this time of year.
At the risk of totally sounding like a hardcore millennial: can you EVEN with that color?!
Roasted beets make this white bean dip super pink and sweet, while seasonings like garlic, lemon juice, and olive oil give it a zing. Love this stuff on crackers, veggies, or…you know…by the spoonful.
What’s your favorite way to eat the rainbow? Based off this list, I’d say the smashed potatoes certainly have my heart. But the pie and the salad come in a close second and third!
