I love my birthday. Is that too narcissistic to admit? I really do.
My birthday is on December 18, and I actually started Fooduzzi on my birthday last year. Because of my birthday’s proximity to Christmas, I’m lucky enough to have an “Alexa’s Birthday Week” of sorts. I always get to see all of my family and friends. I get to partake in the delicious Christmas foods all week. It’s a glorious seven days.
When I was younger, the highlight of my birthday was always my birthday dessert. And this birthday dessert always came in the form of Costco’s All-American Chocolate Cake. I dreamt about this seven-pound monstrosity of chocolatey goodness 364 days out of the year. So when my birthday rolled around, I always strapped on the ol’ feed bag and went.to.town. The icing was so laden with sugar that is actually had a crunchy texture. The cake was so moist and rich that it was difficult to cut. The chocolate curls that coated the outside were snappy and beautiful. Ah, memories.
There would almost always be over half of this cake left after my birthday, and leftovers were something I always looked forward to…as an after-school snack. Yes. I downed a giant piece of chocolate cake as an after-school snack. Nearly every day. Up until that cake was gone. Ah, memories.
When I evaluated these ridiculous life choices I was making and started incorporating more whole foods into my diet, I decided on something less sinfully sweet, yet still delightfully delicious, for my birthday treat: Edible Arrangements. Fruit is always a good thing in my book. It’s sweet, fresh, and packed with nutrients. So that this birthday dessert was still a “treat,” my parents always requested a few of those chocolate-covered bananas for our bountiful bouquet. Super sweet bananas covered in snappy dark and white chocolate? There truly is not a better dessert out there.
While there may always be money in the banana stand (name that show), money is not always in my pocket for these beautiful, although absurdly priced, Edible Arrangements. This is why, dear readers, I bring you Frozen Banana Bites! They’re made with whole foods! They’re gluten free, vegan, vegetarian, and paleo! They’re the perfect summer treat! They’re amazingly delicious! And they’re so so easy to make! Let’s get it rollin’:
Clearly, you’ll need a banana. You’ll get four bites from this recipe, which is enough for one to two people. If you’re feeding more, feel free to use a mess of bananas for all of your Frozen Banana Bites needs! Oh, and I opted to use a speckled variety for extra sweetness, but use a perfectly yellow potassium-packed banana if you so desire!
The Chocolate Coating. Oh, how I adore this stuff. I’ve used it countless times on the blog, and it’s made with just a few simple whole foods (coconut oil, cocoa powder, maple syrup, pure vanilla extract, and salt) for optimum flavor and nutrients in these Frozen Banana Bites. I love that a sinfully sweet Chocolate Coating can easily be made refined sugar-free and dairy free and that I can enjoy this coating totally guilt-free. Whole food chocolate for the win!
Ah, the toppings. I give you two different topping options in the ingredients list for these Frozen Banana Bites, and I truly cannot decide which I love more. Is it the crunchy, protein-packed nut option that’s full of texture and flavor? Or is it the coconut butter drizzle that’s incredibly rich and flavorful? I’m at a loss. You’ll definitely have to try both and let me know what you think. These Frozen Banana Bites are down-right addictive no matter which toppings you choose!
Oh, man. These Frozen Banana Bites are too good. They’re the perfect sweet treat for those sweltering, on-the-go summer days. I’m telling you, one bite into these Frozen Banana Bites, and you, too, will believe there is some serious money in this banana stand.

These Frozen Banana Bites are the perfect gluten free and vegan treat for those late-night summer Netflix parties! Arrested Development fans will love 'em!
You'll Need...
- 1 banana
- 2 Tbsp. cocoa powder
- 2 Tbsp. + 1 tsp. coconut oil, divided
- 1 Tbsp. maple syrup
- splash pure vanilla extract
- pinch salt
- 1/4-1/2 cup chopped nuts (I used pecans because I love them dearly, but use your fav)
- 1/2 Tbsp. coconut butter
Directions
- Prepare the banana: Peel banana and slice into four equal-sized chunks. Insert a toothpick into the bottom of each chunk. Place chunks on a sheet of aluminum foil and freeze overnight.
- Prepare the Chocolate Coating: The next day, add cocoa powder and 2 Tbsp. coconut oil to a microwave-safe bowl. Microwave until the coconut oil is melted. Mix to combine. Add maple syrup, vanilla, and salt, and mix to combine. Set aside.
- Pour nuts onto a small plate. Set aside.
- Prepare the Coconut Drizzle: Add coconut butter and 1 tsp. coconut oil to a microwave-safe bowl. Microwave until the coconut oil is melted. Mix to combine. Set aside.
- Assemble the Frozen Banana Bites: Remove banana chunks from the freezer. Dip each chunk into the Chocolate Coating. Place back on aluminum foil and return to the freezer for the chocolate to set, 3-5 minutes.
- For Nut-Covered Bites: Remove banana chunks from freezer. Dip banana chunks in a second coating of chocolate. Immediately roll in nuts. Place back on aluminum foil and return to the freezer for the chocolate and topping to set.
- For Coconut-Drizzled Bites: Remove banana chunks from freezer. Use a spoon to drizzle coconut butter across the top. Place back on aluminum foil and return to the freezer for the drizzle to set.
- Store Frozen Banana Bites in the freezer. I love removing them from the freezer and placing them in the fridge 2-3 hours before I'm ready to enjoy them.
