AHH. I’m so excited about today!!
Lucia from The Foodwright reached out to me a few months ago, asking if I’d be interested in planning fun little surprise for one of our wonderful internet friends. I, of course, jumped at the opportunity because I’m a complete and total sucker for surprises.
IT’S PUMPKIN AND PEANUT BUTTER’S VIRTUAL BRIDAL SHOWER!!
Pumpkin and Peanut Butter is ran by Liz, one of my blogging BFFs. Liz’s blog is completely vegetarian, and she cooks up some amazing looking desserts and meals (I mean…come on). You may recall that I actually made a recipe for her blog around this time last year (it’s one of my most popular recipes!). AND she actually came to Pittsburgh a few months ago, and we got to meet in person at my favorite restaurant – it was just the best day ever.
BUT one of the big topics of conversation between the two of us over that dinner was her wedding! Liz is getting married in just a few short weeks, and she seemed so excited. And because weddings are one of my favorite things ever, I’ll take every opportunity I get to completely and totally fangirl over them. Like this virtual bridal shower.
Lucia and I rounded up some of Liz’s best blogging buds to bring you some pumpkin and/or peanut butter treats (get it? Pumpkin & Peanut Butter?!) that we know Liz is gonna love:
Pumpkin Spice Quinoa Granola from The Foodwright
Mini Vegan Pumpkin Pies (No-Bake) from JoyFoodSunshine
Pumpkin Spice Baked Brie from Fork in the Kitchen
Gluten Free Baked Pumpkin Donuts from Nourished the Blog
Pumpkin Spiced Whiskey Hot Chocolate from Spice and Sprout
Honey Apple Peanut Butter Tart from Nommable
And me? Let me introduce you to my favorite homemade nut butters ever: homemade pumpkin spice peanut butter.
I mean, can it get any better than this?! I just don’t think it’s possible. Fall spices blended into a creamy, dreamy homemade peanut butter. Am I dreaming?!
It all starts out with some peanuts. You blend them until smooth. Then you add your pumpkin spice seasoning, cinnamon, vanilla extract, and coconut sugar.
Then you’re done. It really is that simple. And that delicious.
Now, a word of warning: your neighbors may hate you for like 10 minutes as you’re blending your peanuts into a smooth and creamy consistency. But no matter. It’s all in the name of delicious pumpkin spice peanut butter. They’ll understand.
Just don’t make it in the wee hours of the morning or late at night, okay? That wouldn’t be so nice.
Liz, I wish you and Nate an amazing wedding day and a wonderful life together that’s full of pumpkin and peanut butter goodies. We’re all so excited for you!
Everyone else, enjoy this pumpkin spice peanut butter! You guys are going to go nutty over this stuff.
Homemade Pumpkin Spice Peanut Butter
Prep: | Cook: | Yield: about 1 cup | Total: |
This vegan, refined sugar-free Homemade Pumpkin Spice Peanut Butter is loaded with fall flavor!
You'll Need...
- 2 and 1/2 cups dry-roasted peanuts
- 1 Tbsp. pumpkin pie spice
- 3 tsp. coconut sugar
- 1 tsp. cinnamon
- splash pure vanilla extract
- pinch salt (optional)
Directions
- Preheat your oven to 200 degrees F. Pour peanuts on a baking sheet and bake for 8-10 minutes, or until fragrant.
- Stick peanuts directly into a strong food processor and blend, scraping down the sides as needed. Be patient here; this will take anywhere from 10-15 minutes.
- When your peanut butter is almost smooth, add pumpkin pie spice, coconut sugar, cinnamon, vanilla, and salt. Continue blending until smooth and creamy.
- Transfer to a glass gar with a lid. Store in the fridge.

Thanks so much, Laura! This is definitely one of those nut butters you can eat directly from a spoon ;)
Laura says
Umm….is there a nut butter that you would’t eat directly with a spoon? I can’t think of a single one…. ;)

The two best flavors in one! I love Wild Friend’s Pumpkin PB, but I think it’d be so much more fun to try making some on my own. But, I definitely can’t say that I won’t sneak a few spoonfuls during the process ;) .

Ah yes! Wild Friend’s is super yummy, but this is so simple! Let’s just agree that both are worth it ;)

Ahhh homemade peanut butter is just magic, can’t wait to try this one!! I neeeever would have thought of adding pumpkin spice! Also, on the whole annoying your neighbors thing – I always felt so horrible making nut butter in our last apartment because I would have our sad little food processor running for like a straight 30 minutes and it was soooo ridiculously loud! All for a good cause though, and they understand that…right? ;P
Alexa [fooduzzi.com] says
Haha! Yes, nut butter is worth bugging the neighbors ;)
Maya | Spice + Sprout says
