Call me crazy, but I love mornings.
My internal clock always goes off at 6 AM, so I almost always am up to an early start. If it’s a work day, I’m getting dressed, doing the whole makeup and hair thing, making Mark and me breakfast, and slowly easing into the inevitably crazy day ahead of me. I’m a huge fan of keeping meals as simple as possible during the week.
I don’t know about you, but by the time I get home from work on a Tuesday, my brain is pretty much fried beyond the point of talking, let alone putting together an impressive, elaborate meal.
For this reason, Mark and I get into meal ruts. Bad. We make the same roasted vegetable salad every week, at least once a week. Being someone that follows a whole food, plant-based lifestyle, I’m used to people questioning, poking fun, and full-out gawking at my eating habits.
