Easy Thanksgiving Stuffing with Quinoa and Vegetables

My fabulous friends over at DeLallo sent me product to use in this recipe today. We’re using their luxurious Extra-Virgin Olive Oil and their bright and sweet Balsamic Vinegar of Modena for this recipe!

Who spent yesterday sitting on the couch in their comfy clothes, watching all of the football games, and eating their weight in glorious game day grub?!

I love football season.

I feel like I’m legally obligated to love the game purely based on my Pittsburgh roots. Pittsburghers eat and breathe Steeler football. The city, with the exception of the bars and restaurants, pretty much shuts down in honor of the black and gold every single Sunday.

And while the game can be incredibly entertaining, I think we can all agree that sometimes the action on the field comes second to the delicious food that accompanies it.

Thai Peanut Burrito Bowls

I’m a huge fan of keeping meals as simple as possible during the week.

I don’t know about you, but by the time I get home from work on a Tuesday, my brain is pretty much fried beyond the point of talking, let alone putting together an impressive, elaborate meal.

For this reason, Mark and I get into meal ruts. Bad. We make the same roasted vegetable salad every week, at least once a week.
