CHRISTMAS COOKIES. To tell you the truth, I never really gravitated towards cookies in years past. Cookies just don’t excite me as much as a fudgy, chewy brownie, a seeeeeriously dark piece of chocolate cake, or some fresh chocolate-dipped fruit.
Until this year.
This year, I’ve gone completely #cookiecrazy. It has been a freakin’ winter wonderland here in the apartment for monhts. Mark and I have pretty much been swimming in Christmas cookies since I wrote my eCookbook a couple of months ago. Not that I’m complaining. It’s been a delicious situation, but a situation nonetheless.
(shameless plug: you can STILL sign up to receive my eCookbook, The Skinny Santa: your essential guide to healthier holiday treats, in the month of December fo’ free! Doooo eeeet!)
So naturally, I’ve been fan-girling over all of the insanely incredible cookie recipes floating around the interwebs this year. From gingerbread, to snickerdoodles, to peppermint, to peanut butter…it’s kind of amazing just how many flavor combinations make up this yummy time of year! So I’ve rounded up 18 of my favorite gluten free vegan Christmas cookie recipes for your viewing (and drooling) pleasure here today! I hope you find some fun cookie inspiration for your happy, somewhat healthy, holiday celebrations!

Welcome to your second delicious dose of #oatweek! Seriously guys, I’m oatmeal-obsessive; it’s one of my all-time favorite foods, and I have it every single day…at least once a day.
You may not know it, however, by looking at the serious lack of oats in my recipe feed. What in the world was I doing for an entire year?!
I mean, sure, we have Banana Bread Granola, Samoa Overnight Oats, and we can’t forget about this super-comforting Coffee Cake Baked Oatmeal. But these recipes are merely scratching the surface of all of the incredible edibles that oats can be a part of!
On Monday we tackled one of my childhood favorite cookies, Peanut Butter No-Bake Cookies (must.make.new.batch.now.). Today, we’re targeting another: Oatmeal Raisin Cookies!

This post is the first recipe for “Fooduzzi’s Oat Week!”, a recurring blog series sponsored by BRM where I focus on creative, crave-able oatty recipes! I of course needed to dive into the wonderful world of Christmas cookies in the first week of the series!
TODAY IS THE DAY, PEEPS!!
Yes, it’s December 1. The start of the hap-happiest season of all. The start of my birthday month ???. The start of everything gingerbread, peppermint, and coziness. And…

So, have you recovered from your Thanksgiving feast yet?
I’m definitely still feeling that whole ohmygoodnessIcan’tbelieveIateallofthat thing. I had this insanely delicious broccoli quinoa slaw with a honey mustard dressing, this super simple fennel puree, these outrageously decadent scalloped potatoes, and these super festive holiday Moscow Mules. Needless to say, Thanksgiving was an über-success.Read More
When I first took the leap and started watching what I was eating, I had the mindset that low calorie = healthy.
It’s a simple mistake to make; after doing a little research, the general consensus is that a calorie is a calorie. Eating too many of them isn’t so good for the good ol’ waistline, right?Read More
